 That's what Lee Hyori said during the interview with Sohn Sukhee after her comeback to the screen, not as a stunning diva as she used to be, but more like a yoga guru. She wears minimal makeup, drinks tea in the morning, pampers her skin with packs made from natural ingredients and leads an eco-friendly life as a way of loving her natural self, rather than a contrived image.

 Today we are more into products with minimal ingredients rather than overly good ingredients and Lee Hyori, once a fashion icon, has become well-known as a lifestyle blogger nicknamed Sogildaek because of her naturalism. As the beauty market sees a rush of natural products with only minimum use of chemicals along the naturalism trend, wineries are going natural as well. In Japan and France, natural wine has gained great popularity in recent years. Naturalism is a trend sweeping the wine industry! The topic today is natural wine, which I talked a little bit about in the last column.

Back to Basics; Wine from Grape

 Before modern technology came into being, it was perfectly natural to enrich the soil using manure instead of chemicals, observe the course of nature and take good care of grapes to make wine. But, at some point, the natural course of wine-making became something special. There are many definitions of natural wine. As I define it, natural wine means back-to-basics wine. And we are all very familiar with "Back to Basics."
 Natural wine is made the traditional way with only minimal technological intervention (for example, extra sugar, use of man-made yeast, additives, oak chips and sulfites and control of acidity). Sulfites, a preservative to wine, are especially important as it differentiates natural wine from others.

Beauty of Natural Wine!

 I first fell in love with wine when I found how the same wine could taste different at different times and temperatures and it was the aroma that drew me to natural wine. Refreshing aroma very similar to that of natural body wash made by the famous UK brand, the sweet smell of bubble gum and the pure flavor of grapes – I experienced unique flavors and tastes. It was more wonderful than a meal served at a Michelin-starred restaurant. Can you imagine? In general, natural wine is fairly light with high acidity.

 Unlike other wine bottle labels full of script that are difficult to understand, natural wine has a simple label design, such as rough background with simple drawing in the middle of the label, a compelling phrase and many more. Biodynamic wines have a unique label design embodying the view of wine producers about their vineyard as a complete living ecosystem. Natural wines with owl and goat on their label as shown in the image above are two of my top recommendations.

Organic? Biodynamic? Natural! Find the Right Natural Wine for You

 Natural wine is divided into two categories: organic and biodynamic. Organic wine is wine made from grapes organically grown and harvested by hand and it has less sulfites than conventional wines, or no sulfites at all. Biodynamic wine is more natural than organic wine. Producers believe that all forms of life on Earth live in sync with the natural biorhythms of a given place and their belief underlies the wine production. They fill the horn of a female cow with manure, bury it underground for nearly six months and use it to fertilize the soil. They also decide when to manure the field and take a rest based on the position of the moon and stars.  The biggest difference between natural wine and others is the certification mark attached to either the back or corner of the front label. Certification mark is given to a wine when it meets organic / biodynamic standards by the government. As countries have different standards, there are some wines that are not labeled with certification marks, but made in a way that natural wine is made. One of the French wine producers said that his organically farmed wines are not labeled organic and it's difficult to meet the standard as fertilizers from the next vineyard flows into his land when it rains as he explained about why the certification mark isn't needed.

 Natural wine is good not simply because it doesn't have chemical additives, but also because of the way producers make it with the help of nature, similar to Lee Hyori's new music. It's different from her previous work and somewhat difficult to across, but still good. There are two types of people when it comes to natural wine; they either love or hate it. And it tastes different depending on the vintage and how it's kept. If you want to feel the experience the living and breathing nature in a bottle of wine, you should try out natural wine.
